HHL Architects was engaged to renovate existing concession spaces near gate 21 at the Buffalo Niagara International Airport, which previously housed Whichwich, BUF Bar, and Mattie’s, into a new single restaurant and bar with a focus on fresh, market style food offerings. The new restaurant, a new prototype for Delaware North, is referred to as “The Market on Elmwood” drawing on a popular local street and neighborhood of Buffalo. The Market on Elmwood combines two primary food service functions into one. One area features a large open “deli market” space with fresh-made choices and grab and go cases, retail merchandising display tables, and a self-service coffee bar. Adjacent to this new market, is a large dining space with flexible seating arrangements, with a long banquette, the bar and a new large window with views into the restaurant and out onto the concourse. Custom decorative wood ceiling elements with suspended pendant lighting serve as accents throughout the dining space. The project also includes a new commercial kitchen.
